Ingredients – serving 4
- 3-4 medium tomatoes, cut into wedges
- 3 tablespoons extra-virgin olive oil, divided
- ¼ tsp salt (optional)
- 1 pound chicken breast cutlets or tenders
- ½ cup whole-wheat panko breadcrumbs
- ½ cup grated parmesan cheese, divided
- 2 tablespoons ground flaxseed
- ½ tsp paprika
- ½ tsp garlic powder
- ½ tsp ground mustard
- ¼ tsp freshly ground black pepper
Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- Scatter the tomatoes on a rimmed baking sheet, and drizzle with 1 tablespoon of oil. Sprinkle with salt (if using), and slide them into the oven so they can get a head start on roasting.
- Meanwhile, line a second baking sheet with parchment paper. Line up the chicken pieces on it, and rub with 1 tablespoon of oil.
- In a medium bowl, mix the panko, ¼ cup of parmesan, flaxseed, paprika, garlic powder, ground mustard, and black pepper. Spread over the chicken. Drizzle the remaining 1 tablespoon of oil over the top.
- Bake until the chicken is cooked through, about 20 minutes. Start checking after 15 minutes so you don’t overcook it. It should be opaque with mostly clear juices. When the chicken is done, the tomatoes should be starting to brown.
- Serve the chicken topped with the tomatoes and the remaining ¼ cup of parmesan cheese. Enjoy!
