Buffalo Barley Soup

Ingredients – serving 10, serving size: 1cup (8oz)

  • 1 pound Buffalo or lean ground beef
  • Celery, 2 ribs chopped
  • Onions, 1 large yellow diced
  • Beef stock, 3 quarts
  • Black pepper, 1 tsp
  • Salt, 1 tsp
  • Bay leaf
  • Carrots, 3 large carrots chopped
  • Pearl barley, 1 cup 

Instructions

  1. Brown buffalo in kettle and drain off fat.
  2. Chop celery, carrots and onions and saute until tender. 
  3. Add beef stock
  4. Add bay leaf and seasoning.
  5. Add remaining ingredients, bring to a boil, lower heat and simmer for 1 hour.
