Ingredients – serving 10, serving size: 1cup (8oz)
- 1 pound Buffalo or lean ground beef
- Celery, 2 ribs chopped
- Onions, 1 large yellow diced
- Beef stock, 3 quarts
- Black pepper, 1 tsp
- Salt, 1 tsp
- Bay leaf
- Carrots, 3 large carrots chopped
- Pearl barley, 1 cup
Instructions
- Brown buffalo in kettle and drain off fat.
- Chop celery, carrots and onions and saute until tender.
- Add beef stock
- Add bay leaf and seasoning.
- Add remaining ingredients, bring to a boil, lower heat and simmer for 1 hour.
