Energy Bites

Ingredients – serving 12-24 bites

  • 1 1/4 cup rolled oats
  • 1/2 cup mini chocolate chips
  • 1/2 cup ground flax seed
  • 1/3 cup raisins
  • 1/3 cup honey
  • 1/2 cup peanut butter or sunflower seed butter
  • 1 teaspoon vanilla extract
  • Water, if needed

 Instructions

  1.  In a medium bowl, combine peanut butter, honey, and vanilla extract. Stir well to mix. 
  2. Add oats, chocolate chips, flax seeds, raisins, and coconut. Stir well to combine all. Add more oats or liquid if needed.
  3. Using your hands or a scooper; form mixture into balls.
  4. Eat right away or store in the fridge/freezer. Enjoy!
