Hawaiian Sheet-Pan Meal

Ingredients – serving 4-6 

  • 1 1/2 Lbs. chicken breast or boneless skinless chicken thighs, cubed (pork or turkey kielbasa sausage
  • salt and pepper to taste
  • canola oil (or your favorite oil)
  • 2 large red bell pepper, diced
  • 1 yellow onion cut into chucks
  • 1/2 cup barbecue sauce (plus more drizzling)
  • 1 can pineapple chunks canned (drained) or fresh juice of 1 lime 
  • Cilantro and white sesame seeds, for garnish
  • 6 cups cooked brown rice or quinoa

Instructions

  1.  Start by preheating oven to 350 degrees and preparing a baking sheet by lining with parchment paper and spraying with oil.
  2. Next, in a large mixing bowl, season chicken breast with salt, pepper, and a drizzle of oil.
  3.  Then add bell peppers, red onion, and barbecue sauce to chicken. Combine ingredients well. 
  4. Bake in the oven for 20 minutes, then remove sheet pan and add in the pineapple chunks.
  5. Return to the oven for 15 to 20 minutes or until the chicken reaches an internal temp of 165 degrees.
  6. Remove sheet pan from oven and squeeze lime juice over the top, add cilantro and sesame seeds to garnish.
  7. Serve over your choice of rice or quinoa and enjoy!
