Ingredients – serving
- 1 cup oatmeal
- 1 cup buttermilk
- 2 eggs
- 1/2 cup sugar
- 1/4 cup canola or avocado oil
- 1/4 cup unsweetened applesauce
- 1 cup flour (half whole grain flour)
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp baking soda
Instructions
- Soak oatmeal in buttermilk; add egg and beat well.
- Stir in sugar and oil.
- Stir together flour, baking powder, soda, and salt.
- Mix together with buttermilk mixture.
- Bake at 375 degrees Fahrenheit for about 20 minutes.
