Ingredients:
- 2 cups flour (white, wheat, or a mix)
- 2 tablespoons baking powder
- 1 teaspoon salt
- 2 teaspoons cinnamon
- 2 cups milk or soymilk
- 2 tablespoons lemon juice
- 2 tablespoons maple syrup
- 1 tablespoon oil
Directions:
- Heat a pan over medium heat or heat an electric skillet to medium heat.
- Mix the flour, baking powder, salt, and cinnamon in a large bowl.
- Pour the milk into a medium bowl. Stir in the lemon juice. Let sit for a few minutes to let the milk sour.
- To the milk mixture, add the syrup and oil.
- Pour the wet ingredients into the bowl with the flour. Stir well to combine.
- Pour 1/3 –1/2 cup portions onto a hot skillet. Flip when small bubbles form. Cook another minute until browned and cooked through
- Serve with syrup or fruit.
