Black Bean Quesadilla

Ingredients (makes 8 medium quesadillas):

  • 8 Tortillas (whole wheat)
  • 1 can black beans
  • 1-2 cups low-fat shredded cheese
  • 1 jar of salsa


  1. Heat a pan over medium heat or heat an electric skillet to medium heat. *
  2. Place 1 tortilla in pan. Top one half of the tortilla with 1/4 cup of cheese and 1/4 cup of black beans.
  3. Fold tortilla half over.
  4. Heat until bottom tortilla is golden brown and cheese begins to melt.
  5. Flip tortilla over and cook other side until it is golden brown and cheese is melted.
  6. Let cool for a minute. Cut into 4 pieces and serve with salsa if desired.

*Or you can microwave the quesadilla until the cheese melts.
