Breakfast Burrito

Ingredients – serving (1)

  • 3 large eggs
  • Pinch pepper
  • 1 slice turkey bacon, cut into 1/2-inch pieces
  • 1/2 cup spinach
  • 1 whole wheat tortilla
  • 1/4 cup shredded cheese
  • 1/4 cup black beans
  • 1/4 cup chopped bell pepper
  • Toppings: salsa, lime, hot sauce

Instructions

  1.  In a medium skillet add 1 tsp olive oil and set to low heat.
  2. Add spinach and cook until wilted.
  3. Chop bell pepper and add into skillet.
  4.  Cook turkey bacon, chop, and place in skillet.
  5.  In a bowl, whisk eggs until well combined and uniform yellow color.
  6. Add eggs to skillet. Gently stir and scrape the bottom of the skillet with spatula.
  7. Drain and rinse black beans
  8. Add black beans and cheese to egg and mix until well combined.
  9. Place mixture in a bowl, assemble burrito on plate, and place burrito back into skillet to cook each side.
  10. Place on plate and cut burrito in a half. Enjoy!
