7 Layer Taco Dip

Serves 6-8+ 

Ingredients:

  • 1 1/2 cups plain Greek yogurt or Light sour cream
  • 2 teaspoons low-sodium taco seasoning
  • 1 can refried beans
  • 3 ripe avocados
  • 1 cup mild or medium salsa
  • 3 cups shredded iceberg or romaine lettuce
  • 1 cup shredded cheddar cheese
  • 2 Roma tomatoes, chopped
  • 1/4 cup canned sliced black olives, drained
  • 1 bag baked tortilla chips, whole grain crackers, and/or sliced vegetables (cucumber slices, bell pepper strips, carrots, etc.)

Directions:

  1. Mix yogurt (or sour cream) and taco seasoning together in a small bowl.
  2. Mash avocados in a small bowl.
  3. Spread refried beans evenly in an 11×8 inch baking dish.
  4. Spread yogurt mixture over the refried beans.
  5. Spread mashed avocados over yogurt layer.
  6. Spread salsa evenly over the avocado layer.
  7. Evenly sprinkle lettuce over salsa layer.
  8. Evenly sprinkle shredded cheese over the lettuce layer.
  9. Top with olives and chopped tomatoes.
  10. Serve with baked tortilla chips, crackers, or raw veggies.
  11. Store in the fridge.
