Zucchini Lasagna

Ingredients – serving 8

  • 5 medium zucchinis
  • 1-pound ground turkey or ground beef
  • 1 Tbsq of oil
  • 1 1/2 teaspoon dried oregano
  • 1 teaspoon dried basil 
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • Ground black pepper
  • 1/4 – 1/2 teaspoon ground cayenne
  • 1 tbsq honey 
  • 2-14-ounce cans tomato sauce
  • 1 ounce box fresh spinach
  • 15-ounce tub cottage cheese or ricotta cheese
  • 1 large egg
  • 3 tbsq quinoa
  • 8-ounce mozzarella cheese
  • 1/3 cup parmesan cheese
Instructions

Prep Zucchini slices:

  1.  Cut zucchini lengthwise into 1/8″ slices. Line large sheet with double layer of paper towels.
  2. Grill or sauté cut zucchini until slightly browned on both sides and some of the water is released. Place on paper towels to absorb excess water.

Make meat sauce, cheese and spinach fillings:

  1. Preheat a large skillet on medium high heat, break the meat into small pieces. Drain excess grease from meat.
  2. Place meat in a medium bowl and add basil, garlic powder, salt, pepper, and 1 teaspoon of oregano, stir. Add tomato sauce and honey, mix well.
